Mesquite trees are ubiquitous throughout much of the southwest as well as in many parts of Texas. The pods are the most important part of the plant, and have provided nutrition for people, domesticated animals, and wild animals for eons. High in protein (40%, nearly double that of other legumes) and other nutrients, mesquite pods can be roasted and ground into flour.
